Day 42 - Feelings & Such
Another day of feeling overwhelmed, but it was manageable. I'm totally ready to have lost all my weight, and be done with HCG forever.

Day 42 Diet - 500 Calories
For lunch, I didn't feel like cooking for myself, so I sliced up a cucumber, and snacked on them with a cup of strawberries.


At dinner, I decided to use shrimp to make Shrimp Cabbage Rolls. Part cajun, part asian :) Frozen strawberry lemonade, and a bread stick to round it out for a very filling meal.

Weight loss from Day 41 = 1.4 pounds

  2. Hi Shawna! Thanks for following my journey, and I hope these recipes come in handy :)

    Frozen Strawberry Lemonade
    1 cup of fresh strawberries, cut in half
    1/4 cup of freshly squeezed lemon juice
    1 cup of crushed iced
    10 drops of liquid Stevia

    Blend all ingredients, until smooth. Enjoy!

    Mock Egg Rolls
    1 cup shredded cabbage
    2 whole cabbage leaves
    100 grams (3.5 ounces) of chicken tenderloin
    Salt, pepper, garlic powder, onion powder to taste
    Amino Acids to taste (optional)

    Place shredded cabbage in a steamer, and season with spices and Amino Acids to your liking. Place lid, and let steam until desired tenderness. While cabbage is steaming, cook seasoned chicken in a small skillet with about 3 tbs. of water. Once cooked thoroughly, shred chicken, and set aside in a small bowl. Remove the shredded cabbage once done, and add to the bowl with the chicken. Mix well, as this will be your filling to your "egg rolls". Place the 2 whole cabbage leaves in your steamer, and lightly season them. Let them steam until tender. Once they are done, remove the leaves, and place them on the plate. With "stem" side facing you, fill each leaf with half of the chicken/cabbage mixture. Once filled, pull the top of the leaf down, over the mixture, and then fold each side in, securing your roll. I highly recommend eating the rolls like burritos, instead of with a fork :)
