For lunch, I went pretty easy with my menu, since I decided to load Low and I up, and go for a visit at my mom's. Skillet shrimp mixed with shredded lettuce to make a salad, strawberries, and a Melba toast. It was okay. It did it's job, and that's pretty much all that matters at this point.
At dinner, I was fortunately already prepared. I had started a crock pot dinner before leaving the house around noon, so I wouldn't have to worry about my dinner when I got home. Steak & asparagus cooked together, with an apple, and Melba on the side. The steak was literally falling-apart-tender, and sooo delicious. Great meal!
